Collier smashed a boundary strewn 146 as HW piled up 296 before Baldwin skittled the Winchester visitors for 97 with a blistering 7-18 return.
Collier cracked six maximums and nine fours in his 146, while Danny Plume hit 55.
Ollie Waddington (2-23) took the first two wickets before Sparsholt crumbled alarmingly from 65-2, losing eight wickets for 34 runs, seven of them to Baldwin, pictured celebrating below.
Third placed Hartley Wintney enhanced their outside promotion prospects with a 199-run win.
